It was an intense experience taking these down. Not just because of its monetary value.
The marbling was just insane. The meat is not far of white, making the seam nigh on impossible to see. A case of trusting your instincts, and hoping that the seam is at the tip of your blade. Once located proceed with caution and the upmost care.
It felt like driving in a snow storm.
I`ll admit my nerves were shot by the end of it.
We were fortunate to tasted a wee piece, needless to say it far and away eclipsed the ordeal of the preparation.
It was also very tricky to Photograph, to show its true colour. And get the right likeness.
