Love this stuff.

Boiled belly ham in all honesty, It gets a week in the cure. Dry cure flavoured with juniper, clove and bay. Simmered with aromatics till tender. traditional served poached with lentils, garlic sausage, root vegetables, chopped parsley and a lick of the broth.
Which i'll admit to having quite the soft spot for.

This lot in the photo i pressed, sliced and baked till crispy. which worked a treat.
